Pumpkin Banana Bread

I had some very ripe bananas and Trader Joe’s has ALL THINGS PUMPKIN right now, so I came up with this delicious pumpkin banana bread. I used gluten free oat flour because that’s what I had on hand, but you could use a different kind of flour if you would like.

My Recipe:

 2 very ripe bananas

1 can pumpkin puree

¾ cup sugar

2 Tbsp olive oil

2 tsp vanilla

2 eggs

1 ¾ cups oat flour

1tsp baking soda

Mix everything together and don’t worry about it being lumpy. Add mixture to greased bread pan and sprinkle top with whatever sounds yummy. I used walnuts and cinnamon, but chocolate chips or almonds would be good too!

Bake at 350 for 50-65 minutes or until toothpick comes out clean. Your house now smells amazing. My bread came out pretty dense and moist, like pumpkin pie, which is just the way I like it. Be sure to  eat a slice or two before your friends steal it all!
